The only ride with christmas stuff is the eagle with the mini tree, and the Sky Trek Tower with lights that look like a fake tree. I think that coaster jon does.
^ It actually is a full size tree. It only looks small because it is way up there. They dumped it down in the middle of the helix. I'm not sure if it is still there.
I alway thought the park should have some sort of "Holiday" festival. Just weekends like fright fest. They could do some special shows and parade and stuff have santa clause in that gazebo in hometown square, and decorate the park with christmas lights. Even if it's just at nights/evenings, I think Six Flags Could benefit from that.
They could convert the "Reflection Pond" into an Ice Skating Rink. Make the scenic railway have big light displays. They could make a bundle selling hot chocolate and Coffee everywhere. I think it would be great. But that probably won't ever happen so....
Some Sf parks have winter light festivals where you drive your car through and look at the decorations, I know Gadv does it but I think I read somewhere that last years would be the last one.

In your idea, would the rides be open? I don't think anyone wants to go 50 MPH into cold winds and snow. Plus, many rides would brake down operating in cold weather. I too have thought of this idea, but I don't think many people would come without the rides. Maybe if the price of admission were dropped dramatically people would come, but SF might not make a profit. Also, many of the workers there are in school. SFGAm might not be able to get all the help they need to run the park. In the end, it is a fun idea, but not practical.
