I don't know about the airport restrictions and how close Joker is to the airport, but I'm pretty sure flying a drone near the park to get pics would be legal as long as you don't go onto Six Flags property(Or any private property for that matter) Someone just did it at SFNE. The one spot I can think of is the South Road Park near Superman
Also didn't someone do it for X-Flight 5 years back?

I'm betting it'll barely be visible from the employee parking lot.

No drone was used for X-Flight. Using one near the park can get you into some nasty trouble if they're as strict as Cedar Fair. Flying a drone over or near Cedar Point gets your reported to the FAA. No joke.
Cedar Fair
All drones (Unmanned Aerial Systems) are prohibited at (in) all Cedar Fair parks, including Cedar Point, and any unauthorized drone(s) observed over Cedar Point will be reported to the FAA and local law enforcement, regardless of its point of origin or operation. Drones may pose a potential safety risk and may violate Federal Aviation Administration guidelines.
Six Flags:
To ensure the safety and enjoyment of all guests, Six Flags prohibits the operation or use of any unmanned aerial vehicle on, from, or above Six Flags’ premises absent specific written consent. This includes all UAVs, also commonly known as “drones,” regardless of their size, weight or purpose.

Where? There are Primo's in Hometown, County Fair, and Orleans, not Southwest.
